Peach Cobbler, because it's Peach Month



YUMMM doesn't this look good?


Read on friends, Read on!!!!!


Bowl 1
combine peaches (8 sliced fresh, or about 40 frozen peices, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, 1/4 tsp nutmeg, 1 tsp lemon juice, and 2 tsp cornstarch.
Toss with hands until coated.


Pour this into a 2 qt baking dish, and bake for 10 minutes at 400 degrees.


Bowl 2
combine 1 Cup flour, 1/4 cup white sugar, 1/4 cup brown sugar, 1 tsp baking powder, and 1/2 tsp salt.
Then cut in butter (6 Tablespoons, diced and chilled).
Using a pastry cutter or your fingers, blend it in until the texture of the mixture is coarse grit like...
Then stir in small amount of boiling water (total 1/4 cup) until mixture is barely combined into a 'doughy' texture.


Next Step
Take Peaches from oven and drop spoonfuls of dough mixture over top of the peaches in small dollops (preferably a small distance apart).



Final Step
Sprinkle cinnamon sugar mixture (made from 3 tablespoons White Sugar and 1 tsp cinnamon) over top of entire cobbler.

Place back in oven and bake until golden brown, about 30-35 minutes.
