All Bran Fibery Muffins

First Step is to pour 1 1/2 cups of fiber cereal (I used All bran with extra fiber) into a bowl and mash it up as best you can *if you have a food processor you'll probably be in better shape than I am*..


Then, add 1 cup buttermilk to that and let it sit for 10 minutes to soften up the cereal.
Get one egg, 1/3 cup oil, 2/3 cup brown sugar. In a different bowl get 1 cup flour, 1 tsp soda, 1 tsp, baking powder and 1/2 tsp salt.

Mix together the mixtures in each bowl

Then mix it all together and pour into muffin cups.

Bake for 20 minutes at 375ยบ.

These are 'good' for being pretty healthy. IF you want to make them super healthy you could use molasses instead of brown sugar and soy milk instead of buttermilk, as well as adding raisins. If I were going to do it again, I would add raisins, for some flavor and probaby some cinnamon as well.
